You are entirely correct. SmartScore is limited to processing .TIFF (and PDF-to-TIFF) image files having 30 pages or less (assuming 300 dpi resolution).
For longer scores, we recommend using SmartScore's Image Editor to slice and dice your score into bite-sized chunks of 30 or less pages. Adobe Acrobat will do it more easily, probably, as well as some other PDF editors out there on the Internetwork.

AFAIK there isn't a setting you can change. You might want to follow up with a support ticket to Musitek.

I would follow ZootS' suggestion to open a support ticket directly with Musitek. I tried to do some follow-up research from the link that he provided and basically found no [public] follow-up whatsoever. It seems the entire topic simply died.

If this is a hard limit for SSX for which there is no remedy, this should be stated somewhere. I've never dealt with such a long score, but it is not hard to imagine a conductor's score for a long piece to exceed this limit.

I would also request that if Musitek does confirm this to be the case, or even better has some work-around to accommodate such scores, PLEASE, PLEASE share it here. I am certain you will NOT be the last person to encounter this issue, and getting it resolved will be a community service.

The reason I raise this issue is I'm facing a score that is 103 pages. These are choral scores of full-length classical compositions. I will open a ticket and see what happens.

But the real question is: is there then a way to "recombine" the entire score? Is there some process, manual or otherwise, or even some suggestions, to get the superscores of the "component" sub-scores consistent to insure correct midi output for playback?

I am assuming, but hoping differently, that the only way to actually "print" an entire score would be to use a third party notation program like Finale. Right?

Are there some program features we have been unable to find to address this situation?

Although I have Finale, I use MuseScore for that purpose. I export XML from SmartScore, then import that into MuseScore - often more than once because of various errors with timing of measures, or other things that I need to go back to SmartScore to correct. Piano accompaniments to choral scores can be particularly troublesome.
I do this for each 30-page section of the SmartScore score, and end up with the full length score in one file.
For me, SmartScore is just a way to recognize printed sheet music that I've scanned to PDF. I don't use it as a player or as an editor, other than to get an error-free XML file to import to MuseScore.
