Welcome to the sandbox.
The different colors represent the "voice" to which each note was assigned. Why certain ones "don't play" could be due to a number of causes, some of which are basic setup issues and others recognition issues.
You appear to be a new user, and as most will attest, there is a bit of a learning curve--I'm still somewhat of a novice. Plus, any sort of character recognition software has some limitations and weaknesses, that in cases you will eventually have to compensate for manually. Just keep at it. Though you don't say, I assume you have purchased SmartScore X. If you haven't done it yet, I would strongly recommend downloading the "Using SmartScore X" user's manual--it sometimes isn't 100% clear about how to do things, but it contains a wealth of information.
You also don't mention which computer platform and operating system you are using. That can also be important.
After you've done a bit of research, if you're still having problems, post back. We'll go from there. If you're having a real "technical issue" you can try a support request, but for what seems to be these types of "beginner" problems the forum is maybe your best best. You will find most of the folks here are helpful, but most, like me, usually have "day jobs" and spend our "spare time" actually using, or trying to learn to use, our software, so responses may occasionally take a while.

Do you know how to turn this feature on and off ? And if it is possible, can ones to display only the voice that is working on?

You can turn off the colored display, but I don't know if you can, or would want to, turn off "all but the voice you are working on". The concept of "voice" in SS is a bit different at times than in some other types of programs, and is used more to ensure rhythmical consistency within a measure than different "instruments" or "parts", though at times (such as SATB choral scores) they can be one and the same.
Although there may be a menu command to accomplish the same thing, I don't know what it is, but to simply turn off the colors display, you need to have the "SmartScore Toolbar" showing. I believe it is on by default (I always have it showing): it is the one with the "Properties" (arrow), "Select" (note in dashed box), "Insert" (note with entering arrow), etc. buttons on it. If it's not already showing, use the menu command "View -> Toolbars -> SmartScore Toolbar".
The "Voice Visibility" tool is the fifth one over, just after the first divider: it's got an up-stem eighth/down-stem eighth note pair on it. It is a toggle: if you click it with the colors on, they go off, and then the opposite.
